Mushroom Duxelles on Toast

This is a fairly simple recipe that punches way above its weight. Don’t be threatened by the fancy name! Whip up this appetizer in under 45 minutes to really impress your guests!

Instructions:

1. Choose any type of mushroom you prefer. I used a ratio of 1/3 Porcini 1/3 Cremini 1/3 Shiitake

2. Roughly dice your mushrooms and Finely chop one shallot

3. Cook the mushrooms down until they release their moisture or shrink by 50%. Add in a pinch or two of salt now.

4. Add in a tablespoon of butter and cook the shallots until lightly browned. Also add in a handful of fresh thyme.

5. Add in 3-4 cloves of chopped garlic (if not, more)

6. Season the mushrooms to taste with more salt, pepper, chili flakes, and Worcestershire/Balsamic Vinegar

7. Toast your favorite slice of bread (I used Challah, a Jewish staple) and top with Brie Cheese and your Mushroom Duxelles

8. Bake the whole toast with cheese and mushrooms in a 400-450 degree oven for 5 mins.

9. Top with fresh Gremolata (Chopped Parsley, Olive Oil, Lemon Juice, Chopped Garlic)

10. Make sure you season and taste as you go!
