Weeknight Bacon & Garlic Pasta

Check out this straightforward recipe combining the the delicious duo of Bacon and Garlic! This recipe will take less that 30 minutes to make and will certainly be a hit!

Instructions:

  1. Fry bacon and garlic until slightly over done.

  2. Pour starchy pasta water into the pan to release the fond. The fond is all of the good stuff that is stuck to the bottom of the pan! This isn’t burnt food, it’s where the deeper source of flavor comes from!

  3. Once the bacon is softened again, dump in the cooked pasta into the bacon.

  4. Hold on to a cup of additional pasta water.

  5. When well incorporated turn off the heat and pour in a cheese slurry (1 cup Pecorino Romano and 1 egg). Make sure you mix vigorously with the pasta so you don’t make scrambled eggs.

  6. Slowly add the extra pasta water until you reach the desired consistency of your pasta sauce. EYE BALL THIS!

    Everyone has their own preferences, and that’s okay!

  7. Top with basil and more pecorino. As always, make sure you salt, pepper, and red chili flake as you go!
